I thought I'd turn to my SR friends on this one. As many of you know I LOVE to cook...but baking is not my thing lol

My husband LOVES coconut and I wanted to make him something yummy but that's not too difficult. Do you guys have any suggestions? :sunshine2:

My grandmother made a coconut cake last weekend from the Paula Dean website last weekend that was awesome. It had condensed milk and something else in it that made the cake part so moist. I don't know how hard it was to bake but I know they don't do things that are complex anymore so I would bet it was simple and you could get the recipe off of her site.

My mom makes a coconut cake that I think is good. Take a cake mix (white or yellow) and bake it according to directions. When done and while still warm poke holes all over it with a wooden spoon handle. Larger holes work better than little holes. Pour a can of Coco Lopez (the stuff you use to make Pina Colada's) or other Creme of Coconut over cake. The you can either put whip cream all over the cake and sprinkle with coconut flakes or just have cool whip available if you want it on each individual piece of cake. If you "frost" it with whip cream you will have to keep the cake refrigerated.

Man that sounds really good too! I like these 'poke' cakes! We like gooey moist desserts so they sound right up our alley!
