Hungry Girl mentioned in her newsletter today combining a boxed cake mix with a can of diet soda. I didn't believe it. She suggested trying different flavors. So I grabbed what I had in the cupboard--a dark chocolate cake mix and a can of Diet Cherry Chocolate Fudge soda. Mixed them together for 2 minutes like it said on the box. Divided it into 24 cupcakes. Baked per the box instructions. Guess what??

They were really good!! The kids didn't even know that they were different than usual. I sprinkled a little powdered sugar on theirs. Angie and I had ours with a dollop of fat free cool whip.

Using the mix I used, it was 170 calories and 4g of fat for a full serving, which was actually 2 cupcakes.

I can think of so many combinations--yellow cake and orange soda, chocolate cake and cream soda, chocolate cake and cherry soda...yum! And the best part was that I always have cake mixes and diet sodas of some kind. I see a lot of these in our future. :)

So what you're saying here is that you were willing to allow me to try your little experiment but not willing to let me eat a FULL serving. I only got one cupcake. :mad:
Since you always have cake mixes and diet sodas on hand, then you won't mind making it again sometime and not being so stingy with your servings!

Now that I think about it, I probably took care of my second cupcake allowance with the double dollop of cool whip I helped myself to! Regardless, I'm still up for next time. Those were yummy. :D

Sounds yummy - thanks, Tricia!! I usually have cake mixes (don't ask why -- I NEVER bake) and diet soda too. Stirring that together I can handle. Guess what the kids are getting for a treat tonight :D

Oooh, that sounds so easy! I wonder if it works with regular soda instead of diet? I don't like giving artificial sweeteners to the kids. Anyone ever try this with regular soda? I just made cupcakes for my daughters birthday party last night and have a ton of them left over or I'd try it myself!

I did it once with chocolate cake mix and Dr. Brown's Kosher for Passover (read-sugar vs. HFCS) cream soda. It turned out well.

Just tried the recipe with a chocolate cake mix and a can of Diet Pepsi with a "kick of lemon". We could not taste the "kick of lemon" at all. Guess that baked out of it. My family gave them thumbs up. At first when I told DH that it had diet pop in them he was a little hesitant but tried one and liked it. We thought they were maybe a little more dense than regular cupcakes but still delicious and simple!

Along the same lines, I :heart: love :heart: a box of spice cake mixed with a can of pumpkin and nothing else. I don't know the nutrition facts, but supposedly it's a WW-approved "recipe" so it has to be decent. It's so easy and so yummy that I make it all year and don't just limit it to fall a.k.a. pumpkin season.

This sounds good. What size can of pumpkin - the 15/16 oz. or the big, fat can that's like 28-30 oz?

Yummmmmmmmm.....love all these ideas. One question, when you make the cake with a can of soda, do you add the other ingredients on the cake mix box, like eggs, oil and water?

Love the idea of a spice cake with a can of pumpkin. I'd also like to know what kind of pumpkin you use, just the basic regular size can of plain pumpkin, or the large can of pumpkin pie mix (like Libby's).

I just tried the cake mix with diet soda recipe and the cupcakes are delicious. I used a lemon cake mix with diet sprite. The batter seemed a little thick when I mixed it up so I opened a 2nd can and poured in another 1/4 of a can. The cupcakes turned out real light and airy so I'm sure the original 1 can of soda would have been just fine. I ate mine with a little fat free cool whip- yum, yum! As soon as these are gone Im going to try the spice cake/pumpkin recipe.

Nicnik, just wanted to say that I made the pumpkin cake this afternoon. The mixture was very thick, so I had kind of a lumpy cake (then again, I'm still trying to teach myself to cook, so that may just be me!) I started having second thoughts about it while I was mixing it, but it tastes better than I thought it would. I did add cream cheese frosting out of personal preference. I'm not sure I'd make it again, but it's not bad. It actually DID end up tasting like I imagined!

I mentioned this and the Diet Coke recipes to my grandma yesterday. She was intrigued by both. I told her I might end up bringing the pumpkin cake to Thanksgiving (and maybe I can make the Diet Coke cupcakes when my family comes over to put up my tree!)
