My husband and i are thinking of going to Disney for a 5 night vacation next Feb. Any recos on which Disney resort for a couple (no kids)

That would be my first choice, also. Plus it is right on the monorail which is very convenient.

We really liked Port Orleans French Quarter & Coronado Springs Resort....however, if our budget allowed, Poly would be our first choice! :0)

My vote would go to the Poly also!

My first vote would be for the Poly but if that doesn't fit into your budget then I would vote for Coronado Springs.
