.......or suggestions for Vegan cookbooks.

I just had an EKG at my annual physical and it came out abnormal so I was sent to a cardiologist. My doctor also discovered a heart murmur and various other issues. I have been placed on a vegan diet. Fruits and vegetables and whole grains only, no pasta or bread, no potatoes. I can have oatmeal and oats, barley and bulgar wheat, soy, almonds and walnuts. I also can't have any processed sugar or sodium, which pretty much leaves out most processed foods.

I'm pretty well set for breakfast and lunch and snacks but it's dinner I need help with.

Last night I roasted a large pan of vegtables and that was great....but I need some variety.

There are a lot of vegetarian recipes out there but most of them use dairy products and I can't have those either.

Anyone have any cookbook or recipe site suggestions? Needless to say this has been a real challenge.

Appreciate any recipe or direction anyone can point me to.

Are you not doing eggs as well? I was a non-meat eater for many years, but I did the eggs and dairy.

I love the morning star products. they have a veggie "chicken" pattie that is so yummy. I cut that up and put it over a bed of lettuce/veggies.

Thanks!! It is starting off not bad. I'm sure I can deal with it. I just have to be creative.

Nope....no eggs, no dairy, no animal products at all. I have a dairy allergy (allergic to a protien called casein) on top of it all of this and most processed foods have some form of dairy of a dairy by product.

Haven't tried it yet but it looks good. I've also got a great chili recipe at home that i'll post later on. PM me and i'll give the the website!

Ingredients:

4 portabello mushrooms
1 Tbs. olive oil
1/4 tsp. salt
1/8 tsp. pepper
/3 cup Galaxy Foods Vegan Slices, shredded (cheese)
2 slices meat-free Smart Bacon, crisply cooked (optional)
2 small tomatoes, seeded & chopped
1 Tbs. fresh parsley, minced
1 Tbs. garlic, chopped

Directions:

Preheat oven to 450 F. Line a baking sheet with foil and spray with cooking oil; set aside.
Wash mushrooms and let dry; brush mushroom caps and edges with oil; sprinkle stem-side with salt and pepper and place, round side down, on baking sheet.
Divide vegan "cheese" slices among mushroom caps and bake 10 minutes, or until mushroom edges begin to brown.
Remove baking sheet from oven and sprinkle soy bacon (chopped), tomato, garlic and parsley over mushrooms.
Return baking sheet to oven and cook an additional 5 minutes.
If desired, cut into wedges and serve with toothpicks.

Thanks!! That sounds great. I'm wondering if the vegan cheese has casein in it. I'll have to check out that brand. Every vegetarian cheese I've ever looked at has casein which is a milk by-product so it's a no-no for me. My market doesn't carry a vegan cheese. Interesting!!! I haven't had a piece of cheese or anything that tasted like it in 5 years.

My market doesn't have a big soy/vegan section. They have vegetarian cheese but no vegan cheese and I have never seen vegan bacon.

A Whole Foods market just opened near me and when DH gets back from his business trip..the end of the week.....we'll be going there. They are great. I can go on the Whole Foods website, put in the specific store location and it will give me an aisle by aisle list of products that are dairy free.

Sorry your test didn't come out with better results Kathie. I have a great recipe that I can't take credit for. It is for Rice and beans and comes from Plantlady, who posts here sometimes but hasn't been around lately (I miss her and I'm a little worried by the way)

here it is:

1 cup brown rice
1 can tomato sauce
1 can chili beans
2 tsp. chili powder
1/2 tsp salt
1/4 tsp each oregano, cumin, garlic powder, onion powder
2 tbsp olive oil
2 cups water

Mix all ingredients in two quart casserole dish. Bake at 300 for 2 1/2 hours.

Really good....my dd loves it too!

I also have a lentil recipe that is pretty good. I have left the optional cheese out of the recipe:

Lentil Rice Casserole:

3 cups water
3/4 cups uncooked lentils (washed)
1/2 cup uncooked brown rice (rinsed if needed)
juice of 1/2 lemon
3-4 tsp Liquid Aminos, to taste (I don't add this as I don't really like it)
1 small onion, chopped or 1/4 cup instant dry onion
1/2 tsp basil
14 tsp oregano
1/4 tsp thyme
1/4 tsp garlic powder

Bake uncovered at 300 for 2-2 1/2 hours or until lentils are tender and water is absorbed. Top with fresh parsley, if desired.

These two recipes are actually quite similar. We like them both, but prefer the rice and beans.

If I can come up woth any more, I'll let you know.:)

Crazy huh? The list of things I can't have is much bigger than the things I can.

Bulgar wheat is what is in tabooli. I know that's not how it's spelled.....but that's they way it sounds. :rotfl: There are package directions to cook it to use as a side dish.

Hopefully after a few months I can modify my diet. Depends on how well I do on this as it is. So far it really hasn't been bad. I'm not hungry so far and that is a good sign.

Hard learning to eat totally different than what you are used to.

definately would be hard for me. Good luck with it. I'm sure you could substitute another grain for the rice? Just so you know the rice and beans recipe doesn't come out tasting like chili, but it is really good.

My Stop & Shop just moved all their dairy free products out of the natural food aisle to make way for EGG NOG!! They put the soy milk, soy yogurt and soy creme cheese in with the regular dairy products and cut way back on the products they carry. Morons!! :angrywife:

I think my trip to Whole Foods is going to be worth it.

Better than I expected. My daughter came by last night and cleaned out my pantry of everything I can't eat. She was thrilled.

I haven't been hungry and that is big for me. I can have soy yogurt and I use those for a snack or the little cups of fruit. Those I have to drain and rinse. I'm supposed to be eating 6 small meals a day. I think because I am eating more often......I am eating less. I take less at dinner because I'm not as hungry since I had something to eat a few hours before. After dinner is the worse time for me.

I made bulgar wheat tonight. I used it as a side dish. It's not rice pilaf but it wasn't bad. :rotfl:

Only bad thing is eating all these vegetables has really caused an increase in the amount of hot air being released from my body. :blush: Hopefully once my body gets used to it......it will calm down.

Hey, BTW (totally off topic) did you happen to see Tony LePore (the dancing cop on Fox this AM? Funny!

I didn't see it today but channel 10 usually spotlights him. He's too funny.

Hey Kathie... SIL & BIL are vegan so I will ask about cookbooks/recipes. I know they eat a lot of veggie burgers, and the Amy's brand has some vegan stuff. Do you have a Whole Foods near you? They eat a lot of Indian food out, too. Good luck!

I lost 4 pounds. But......part of that was due to the fact that I couldn't eat anything but soup/broth for a few days. I think I OD'd on bulgar wheat. I was so happy to be eating something solid that wasn't green, that I guess I ate to much. I was eating it at every meal. My insides didn't like that and they rebelled.

This sure has been a learing process and I'm only 2 weeks into it. It's going to take some time for my body to get used to and to figure out what agrees with me and what doesn't. I really haven't been hungry and I even went out to eat last night. I ended up taking a huge container of food home because I ordered too much!! :rotfl: Going ot have to get used to that too.

I had a heart stress test today and the initial report was no blockage. Hopefully when they compare all the results that will be the final conclusion.
THAT would be in my favor.

I still have to make the trip to Whole Foods. Hopefully within the next couple of days.

It's been 3 weeks and I have lost 7 pounds. At least that is what my scale says. The darn thing is a dinosaur so we're talking about getting a new one.

The holidays were tough. I ate my regular meals except for Christmas night. I did have some antipasto.

DH, doll that he is, bought 3 Vegan cookbooks for me for Christmas. He's the chef and he said he spent hours at Barnes and Noble going through cookbooks. He's thrilled because it is forcing him to eat healthier too although he still eats meat, fish and dairy.

I've scanned the books but have only made a couple of things.

One was a barley, mushroom pilaf I made yesterday. It was awesome. Finally some substance. LOL I was getting to feel like a bunny rabbit there. I have to say, I haven't been hungry.

I also hit Ocean State Job Lot. They have a whole new section of Bob's Products. I found Chix pea flour, and muselix there. It's all natural no addatives or preservatives. Many of the recipes use Chix pea flour instead of cream to thicken stuff. This is quite a learning experience.

I don't feel like I lost 7 pounds though. Guess I'd better look into that new scale and quick. I'm hating the treadmill but I do it.

Congrats on the weight loss so far!

Do buy a new scale and weigh yourself regularly once a week at the same time of day each week, then you'll have a more reliable measure....but way to go so far. I love that section on Job Lot, heck I love Job lot period, but I have bought several of the Bob's products myself.

I hope you can find more recipes that make you feel like you are not missing out. I have to say, when I eat well, I'm usually not very hungry either, all the fiber and all!;)

Southwestern Yellow Split-Pea Soup

1 large onion, chopped
3-4 cloves garlic, minced
1 pound yellow split peas (or chana dal)
1-2 teaspoons canned chipotle pepper, minced
7 cups hot water
1 cup sliced carrots
2 teaspoons mild chili powder
1/2 teaspoon cumin1 1/2 teaspoons Mexican oregano
1 10-ounce can diced tomatoes with green chilies (mild or hot, depending on taste)
2 cups fresh or frozen corn kernels
1/2 red bell pepper, chopped (or 1 roasted red pepper)
salt to taste
ground black pepper, to taste
chopped onions, tomatoes, jalapeño pepper for garnish

In a pressure cooker, sauté the onion in a little water until translucent. Add the garlic and cook one more minute. Add the split peas, chipotle, water, carrots, chili powder, cumin, and oregano. Seal the cooker and bring to high pressure. Cook for 9 minutes at high pressure. Remove from heat and allow pressure to come down naturally.

Open the cooker and add all remaining ingredients except garnish. Taste and add additional chipotles, chili powder or other seasonings as needed, and add additional water if it seems too thick. Cook uncovered on low for at least 15 more minutes. Serve in bowls with garnishes on top.

I recently went vegetarian, and I'm on the path to vegan...i'm just so darn addicted to cheese!

I joined an email subby at vegweb.com
they send daily and weekly reciepes that are varied and so far really yummy!
For the most part they are vegan with only some having dairy like items that I'm sure you could substitute very easily.

Also check out peta2.com they have lists of vegan foods that are common grocery store items, just happen to fit the vegan life style. They are very careful to check for casien as well.

I started being veggie as a result of reading "skinny *****" and I loved that book! I'm ordering the cookbook tonight from amazon.

oh yeah, and I recently read an article about the gas issue lol

it will get better! If you read my chatty women posts I give a few tips on how to cut down on the gas inducing enzymes.

I'm heading off to California in the morning. First trip on this diet. We'll see how it goes.

Thanks for all the help and that recipe for the soup looks delicious. I'll have to try it when I get home.
