Hello,
Hubby and I are vegetarians (we do eat dairy - just no meat of any kind)
and we got a new slow cooker from some friends of ours. :cooldance:
So does anyone have any good vegetarian recipes or a suggestion for a
good vegetarian slow-cooker cookbook?

There is a slow cooker thread under the Merchant Advertisement section. I think Kathie has posted some recipes in there. She has similar eating styles as you do.

Weight Watcher tortellini stew is one of our favorites. I think I posted it in one of the threads here, so you may find it if you do a search...other wise google it. Very tasty!

A good cookbook that I have is Fresh From the Vegetarian Slow Cooker by Robin Robertson. She has several cookbooks out most of them vegan or vegetarian.
The cookbook covers instructions for cooking with tofu, tempeh, seitan, egg and dairy alternatives and vegetarian burger crumbles. The chapters are appetizers; soups; chili's and stews; beans & grains; potpies, pastas & main dishes; stuffing and the stuffed (stuffed peppers is one recipe); vegetables; condiments; desserts; breakfast & breads; & hot drinks.
I have a dairy allergy so this is a great book for me.

Here is a link to a recipe for refried beans in the crockpot. The last time I made these, I mashed half of the recipe and the other half I served over cornbread. Also I use mostly chicken broth for the liquid.

Glad to help. I'm new to being a vegan. I'm learning to cook a lot of different things. Been very interesting!
A really great vegan cookbook (not slow cooker) is the Mediterranean Vegan Kitchen by Donna Klein. She also has several vegan cookbooks. It will take me years to go through it all. :rolleyes:
