View Full Version : Anyone make an ice cream cake???

Today is DS's 9th Birthday.... He wants an Ice Cream Cake for tomorrow when the extended family comes over for his bday, and he wants me to make it.. So I found a recipe online for one, even though I'd have to say, I did figure out half of it...Melt the ice cream, fudge, crunchies (even though at first no idea what whey were supposed to be... turns out Crushed oreos... ) then more melted ice cream...

Okay that went great... So much easier than a real cake.. Here's the problem... the icing they suggested ... melted icecream and coolwhip... Well I can't get it to stay hard when I try to pipe it onto the cake.

Now the next question... How long should it be in the freezer to free hard like an ice cream cake.

It's been a learning process all day long with the different things I encountered... Any suggestions would be great! If I come up with any good ideas, I'll let you know.

Any progress on it??? Or are you eating it tonight?? I'm really curious on how it turns out, maybe I'll make one for my own bday next week! lol

Are you mixing the icecream with the coolwhip?... and the "ice cream" icing shouldnt be too melted. Just enough will be a smooth whip. And should be more cool whip than ice cream 70/30. Thats how I have done it
Freezing should be a good 12 hrs.

I've never thought about making them at home, If anyone has a picture of a homemade one I'd love to see it.

The cake turned out OK. I'll have to try the 70/30 for the coolwhip and ice cream mixture next time. I probably used 50/50 because each time I got the icing out of the freezer it would melt right away.

I didn't take any pictures of the cake because it really didn't look too good. When we first ate it it was more like a ice cream sundae. But as it's been sitting in the freezer, the ice cream is getting harder, more like a ice cream cake. My Mom thought if I had a separate freezer, it would have worked a little better. The fudge and crunchies in the middle were also better as it sat there.

The kids still enjoyed it! I like making "regular" cakes, but DD7 & DS9 prefer the Ice Cream Cakes ~ I'll have to try again in Dec... DD's bday.

my son's birthday was today and he turned 9 also. he also wanted an ice cream cake. but i was not going to make that one. so i bought a carvel ice cream cake. we just finished it.

i am really impressed with someone for making an ice cream cake.

Thank you and Happy Birthday to your son!! Well I have been meaning to try to make one. The kids kept saying "You can make a regular cake, what's so hard about a ice cream cake."

DD7 has the perfect cake for me to make into an ice cream ~ It's a Barbie cake ~ from one of the Barbie playsets... she wants one just like that, only ice cream, no cake... trust me ~ that's not going to happen anytime soon Unless I take it to Carvel and ask them to make it for me!! :rotfl:

I've bought MANY ice cream cakes the past years... I thought it couldn't be too hard, which it really wasn't hard. Now I just did a square and I didn't try to get it out of the pan either - Now that would have been hard!
